Introduction to African Restaurant Foods
Budenaa: Thin, spongy pancake-like flatbread made from barley, rice and wheat flour and fermented over night for flavor. When available, Budenna is made with imported Tafii flour.
Alichaa: A yellow based stew that is simmered with several herbs, but not hot and spicy
Berbere: Imported ground spices composed of paprika, salt, ginger, onion, garlic, ginger, cloves, cinnamon, nutmeg, cardamom, allspice, coriander, and red pepper.
Qimamii: Spicy butter made from boiling onion, garlic, ginger, cinnamon, turmeric, cardamom, clove,and nutmeg in butter.
Tafii: Ancient grain of Oromia available in whole-grain form as well as ground Traditionally used to make Budenaa
